Who can resist the taste of a spicy pickle made of tropical fruits? Unfortunately, there are people who cannot enjoy pickles due to the use of vinegar in the pickling process. Their digestive systems are sensitive to acidity and cannot tolerate the high acidity levels of pickles. Since most fruits used for pickling are acidic by nature, the addition of vinegar makes matters worse for such persons.
I am no stranger to this situation and have therefore created some recipes for fruit pickles which can be enjoyed by all. My recipes for making pickles out of raw mangoes, ambarella and wood apple do not require vinegar. What’s more, they can be enjoyed soon after preparation—no need to wait until the fruits marinade. So go ahead and enjoy some deliciously spicy Sri Lankan fruit pickles!
