I am no stranger to this situation and have therefore created some recipes for fruit pickles which can be enjoyed by all. My recipes for making pickles out of raw mangoes, ambarella and wood apple do not require vinegar. What’s more, they can be enjoyed soon after preparation—no need to wait until the fruits marinade.
